This week on our dinner menu we are going to have spaghetti, but not just any spaghetti... we will use the "recipe" for Vivian Howard's broccoli spaghetti!" You may not be aware of this, but in March, I went to Kinston on the invitation of Blue Cross North Carolina to film some segments on healthy nutrition with the famous, one and only, Vivian Howard, star of It's a Chef's Life and owner of her and her husbands restaurant in Kinston NC, The Chef and the Farmer. When I was there, we "revamped" some recipes to make them healthier, but our spaghetti segment was all Vivian Howard. She wanted to show me what she does with her spaghetti, and how she makes it for her family and her kids. Totally "dietitian approved," I had no further insights to make this any healthier. I was so impressed with her way, that this has become our way to make spaghetti, every, single, time!!
Here is the sauce recipe:
1 pound of ground turkey
2 garlic cloves, if you like
I large can stewed tomatoes
1 large bowl of uncooked spinach leaves
2-3 carrots blended
Blend these in blender until it looks like a green smoothie
Add to pan
In pan, cook ground turkey with onions, Vivian said if you sprinkle ground cumin on the ground turkey it takes on a "meatier, beefier" taste...so I always do that because my hubby HATES ground turkey!! Great trick, it works !
And the final product, after 30 minutes, the green turns orange/red, so put this yummy vegetable filled spaghetti sauce over steamed or roasted broccoli, cover with freshly grated parmesan cheese and ENJOY!
